For sale All-Clad Copper Core 3-Quart Saute with Lid Great saute panBy N. WoodI own the 3 quart version of this pan, which measures almost 11" across and has plenty of room for meals for 2-4 people. I also own the 10" Copper Core frying pan, which gets more use than this pan because it's lighter, browns a little better, and the sloping sides make the food easier to handle in the pan. This saute pan does an admirable job of browning, though, and the high sides are essential for foods that will finish their cooking in liquid. If you can only afford one pan from the Copper Core line, I'd suggest this one over the frying pan, because it's more versatile. This is actually the first All Clad pan I bought and I was so happy with it that I now have almost the whole line of All Clad cookware. I love this size for making rice pilaf; it is wider and has lower sides than a saucepan, which I prefer for simmering rice. It is also a great size for one or two boil in the bag veggies or simmering soup for one or two. It is made very well, is easy to clean, heats evenly and is designed to last. All Clad cookware is one of the most expensive lines around and it is worth every penny, it really is lifetime cookware (with a lifetime warranty to prove it). This saucier is a definite must have, it is a very versatile size and is a nice pan to start with. Very, very highly recommended! A+++! Also, if you should get something stuck to the stainless steel use a product called "Bar Keepers Friend" to clean it. Most supermarkets have it and Kitchen Etc. and Bed, Bath and Beyond carry it too. JonesFor some reason, AllClad set the angle of the handle much shallower than on their other pots and pans--the angle is similar to a fry pan. When you lift the pan off the stove, the rim of the pan does not remain level. This is especially annoying if you are working with this pan alongside several pots. A minor detail perhaps. With its heavy construction, it cooks so evenly; I don't have any scorching while simmering. With the interior being stainless steel, there is none of the iron taste that comes from an iron skillet reacting with food. This pan is perfect in size and depth for sauces - cooks faster than a saucepan. All cooks need their main pan to be of this quality and it's so beautiful. I feel that All-Clad makes good cookware and their copper core series is by far their best, but the Stainless series is good too. The stainless series is also about half the price of the copper core, making it a great choice for those of us who can't afford the copper core series. Honestly though, an expensive pot will not make you a better cook, just like owning a Mercedes will not make you a better driver. This is a piece of cookware for the cooking enthusiast. 1 All-Clad Stainless 3-Quart Saucepan A Great Head of Steam!By Clare PawlingI have read people's comments about the relatively small diameter (6") of All-Clad's 2-quart saucepan. I find that the narrow diameter of this pan maintains a very hot, moist "atmosphere" in the upper region of the inside, even with the lid off. Because of that, the top of the food in the pan benefits from the radiant heat above it as well as from the physical-contact heat of the bottom and sides of the pan, even as you are adding ingredients and stirring, and with little loss of moisture from the food. The narrowness of the top of the pan helps prevent the wafting away of heat and moisture. (Using a long-handled stirring tool helps to protect your fingertips from the steam!) If you find that you are filling this pot with food, you really should transfer the food to a larger pot. In the 2-quart pan, leave enough space above the food for the "head of steam".
