Oh All-Clad Copper Core 4-Quart Saucepan with Lid Amazing cookware, Never Knew It Could Be This GOOD!By Todd MarchOver the years I have used a variety of cookware--aluminum bottomed stainless Revere Ware, Magnalite Professional, Calphalon, Calphalon Professional NonStick. When I finally had to throw out the last of my tattered collection, I started to look for some stainless cookware that would stand the test of time and offer performance to boot. I decided to splurge on this All-Clad Copper Core.One of the pieces I recieved was this 4-Quart saucepan. I love to use this to cook pasta for two, and it's the perfet size for making stock with one chicken carcass or a risotto for several. Love this pot!Delighted to report that I am THRILLED with this expensive splurge! All-Clad is NOT about expensive hype and status, those these pans are beautifully made, instead they do everything cookware should, and have literally changed the way I cook. Having attended CIA and worked as a professional chef for a few years, I know the golden rule for food not sticking: preheat pan, add oil, let oil heat for 5-10 seconds, then add food. Using these guidelines with the Copper Core, nothing sticks! All-Clad 5204 w/loop All-Clad Stainless 4-Quart Saucepan with Loop

Useful All-Clad Stainless 4-Quart Saucepan with Loop Nice but the loop handle interferes with the steamer insertBy A CustomerAll clad pans are great, with one caveat. This line doesn't have a rolled lip so that pouring is more difficult than it should be. Of course with a 4qt pan that usually isn't an issue.If you are strong enough to lift a 4qt pan by the long handle don't get this version, get the one without the lip. Why? Because the loop handle prevents both the steamer and the double boiler inserts from seating firmly. They work, but it isn't as good as the non loop version. Now admitly using a 4qt pan for steaming is overkill, but if the 3qt version is in use, or you didn't buy that one too, you will wish you had the non loop version. These pans are heavy, (Although not as heavy as pure copper pans)and a gallon of fluid is too, so that if you are small the extra loop would be beneficial for moving the pot from stove to sink, so like everything its a tradeoff.30 of 30 people found the following review helpful. »» Read more...

1 All-Clad Stainless 3-Quart Saucepan A Great Head of Steam!By Clare PawlingI have read people's comments about the relatively small diameter (6") of All-Clad's 2-quart saucepan. I find that the narrow diameter of this pan maintains a very hot, moist "atmosphere" in the upper region of the inside, even with the lid off. Because of that, the top of the food in the pan benefits from the radiant heat above it as well as from the physical-contact heat of the bottom and sides of the pan, even as you are adding ingredients and stirring, and with little loss of moisture from the food. The narrowness of the top of the pan helps prevent the wafting away of heat and moisture. (Using a long-handled stirring tool helps to protect your fingertips from the steam!) If you find that you are filling this pot with food, you really should transfer the food to a larger pot. In the 2-quart pan, leave enough space above the food for the "head of steam".
