OK I just got All-Clad Stainless Large Paella Amazing cookwareBy Book WormI received a few all clad products (the paella pan, sauce pan, and a fry pan) for graduation and they are excellent. Despite not being teflon, food doesn't seem to stick and clean up is easy. The handles don't get hot even though they're metal too (they do get a little warmish, so be careful just in case). I'm not sure if I'm supposed to or not, but I put them in the dishwasher and haven't had any problems. This specific pan is great for items like pasta w/ cheese and veggies. I completely concur with him. I don't normally do reviews, but this product is absolutely outstanding.The lid is solid locking with reference marks so the user can determine if the lid is, in fact, locked. There will never be a steam burn from a top dislodging when boiling water is being poured. This kettle is safe.The combination interior baffle and holes in the spout entry assures the user of never getting drenched with a deluge of hot water surging through the spout. This feature alone reveals the beyond-the-bounds thinking that went into the design of this kettle. I have never seen anything like this in a kettle. Brilliant design.The fact that the kettle does not have a seam attests to its high level of design considerations. Without a seam the kettle will remain in one piece forever and not collect a museum's worth of mineral deposits. Sure, the handle gets hot, but the simple application of a smaller flame overcomes this minor problem. OK I just got All-Clad Stainless 11-inch French Skillet with Lid LOVED my first experience with stainless steel!By Denis-MounieI didn't actually buy my skillet through Amazon- I had gift cards for a department store and bought their overpriced skillet- it's less expensive on Amazon.I used it for the first time last night and was kind of worried. Some reviewers new to stainless steel complained bitterly of sticking and burning and warping. So I read up a bit on how high you should heat the pan and the water drop test and when to put in the food before I finally got up the courage to cook with it last night. I made hashed brussel sprouts and then wilted spinach. The brussel sprouts were going to stick, I thought, until I added the splash of vermouth the recipe calls for and it all bubbled up and off the surface, making lovely browned bits and wilting the sprouts just right. When they were cooked, I didn't even wash up first- I emptied the sprouts and with a little water, went right to work wilting the spinach. It all came out so perfectly I couldn't wait to write a product review. I now have this skillet and the soup/rice pot and I'm looking forward to collecting more All Clad pieces. The only thing a potential buyer needs to be aware of is, that if they are planning on tossing their food, they had better be strong because this unit is heavy! Other than that, it proves to be very useful for large portions. It heats quickly, heats evenly, holds the heat and leaves plenty of room to stir. Yes, it does heat evenly and allows the heat to drift up the sides. The purpose of a stirfry pan is to allow heat to move the sides of the pan to allow food touching the sides of the pan to cook as well. Now keep in mind, there isnt a perfect stirfry pan out on the market if you are cooking on a traditional gas top, flat top or coil range. A garnish of meats, which varies from region to region, and a gratin topping are added in the final stages'This is a somewhat pricy piece of cookery for something designed to do a particular, somewhat complicated dish. I originally bought it with a gift certificate to a good cookware store because I wanted to be sure I had something both durable and distinctive. I have since found that the size and shape of the pot, aside from the superior All-Clad construction is excellent for both braises and thick gratins, two of my favorite types of dishes. It also happens to be just the right shape for whisking sauces and making baked pasta dishes and casseroles (note the similarity in name) such as macaroni and cheese. How useful All-Clad Stainless 13-Inch Braiser Pan This pan is great!By A CustomerI recently ordered this pan, wondering if it would be worth the money. I have a smooth cooktop and my larger saute pans don't have flat bottoms which causes the pans to spin when I stir - very annoying. This problem is solved with this pan! It is very heavy duty so warping won't happen. It is wonderful to cook in and cleans up easily. The cooking surface at the base is about 10 inches, and at the top the pan is about 13". I chose this particular pan because I knew I would be able to cook a wide variety of meals in it. My smothered pork chops were awesome when cooked in this pan. While the 6-qt has served us well for several years, I discovered I'd need the slightly greater volume when making some fruit preserves this summer. So I bought the 8-qt. It's been a joy to own and use. Unlike the 6-qt, whose handles get a mite warm after long stove-top cooking, the 8-qt handles rarely get hot, even after cooking on a gas range for a couple of hours. Hey take a look at this All-Clad Stainless 14-Inch Fry Pan A Fantastic All-Purpose PanBy S. A. JohnsonAfter going with a non-stick version and having problems with that (not knowing the best way to use it), I exchanged it for the stainless version. This was a great decision. First, it showed me that All Clad does stick by its lifetime warranty. Second, because I learned that I don't need non-stick for everything and I found out the best way to use this type of cookware.The 10-inch size is great for most everything. Every once in a while I could use a 12-inch version for more volume but not often. I use this guy for eggs, meat, stir fry and more. The pan heats really evenly and feels great in my hand. The handle does a great job of dispersing heat and staying cool, too. And, though it doesn't come with a lid, the large lid from the stock pot fits it well.When things do stick, I don't worry about attacking it and scratching off the surface. I can use a scraper, sponge, or scouring pad without any problems. I find myself reaching for a saucier when I could use this pot. My advice is not to get a saucier in a similar size.When I have used this pot, it lives up to the All Clad reputation -- heavy for its size and heats well. Angled sides really speed evaporation.Williams Sonoma has a version of this pan that had markings on the inside that so you could see when you've reduced the contents by half or whatever.
